We have begun preparing for the next project on the farm and it may be our most ambitious undertaking to date. We have decided to start raising pigs. I put a deposit on 3 large black piglets that I will be picking up next month from Double H Pig Ranch in Maine. I chose large black hogs due to their amazing taste, docile nature and the fact that they are well suited for being raised on pasture and in wood lots. To make this project even more challenging and rewarding I decided that I would like to feed these pigs as many acorns as I can collect. For the past week I've been going out every evening and collecting at least one 5 gallon bucket of acorns. Our goal is to raise three pigs to be ready for the summer of 2016. We will sell one whole, sell one at next summer's farmer's market and keep one for our freezer. If anybody has a bucket of acorns that they want to get rid of please let me know.
